Indian Mint Chutney Cucumber Tea Sandwiches

A refreshing Indian style tea sandwich filled with a layer of creamy butter, herby Indian mint chutney, and fresh cucumber slices.

Ingredients
 

  • 4 slices white bread
  • 2 tablespoons salted butter softened at room temperature
  • 2 tablespoons homemade cilantro mint chutney or store-bought chutney
  • ½ cucumber (any kind will work)

Instructions
 

  1. Cut the crusts off your 4 slices white bread.
  2. Generously butter each slice of bread with ~½ tablespoon of butter. This creates a barrier between the chutney and the bread so as not to create a soggy sandwich.

  3. Spread roughly ~½ tablespoon of cilantro mint chutney of each slice of bread.

  4. Layer one slice of each sandwich with sliced cucumbers and place the slices together to form a sandwich.

  5. Cut in half diagonally and enjoy.

Notes and Tips

  • Don't throw out the crusts, you can cube and bake them for croutons!
  • Adding thinly sliced cucumbers, tomatoes, and red onions to this sandwich is a great option for getting a more filling sandwich.
