    Why this recipe works

    This is a simple tea sandwich that gets huge flavor from Indian cilantro mint chutney. We add a layer of butter or margarine (vegan) to the bread to help shield the bread from getting soggy from the chutney so it stays fresh for the whole tea party or picnic.

    Ingredients, substitutions, variations

    A sheet tray with white bread slices, salted butter, a bowl of mint chutney, and two mini cucumbers.
    • White Bread Slices - You can choose a soft sandwich bread that you like the best.
    • Salted Butter - Use margarine if you are trying to make this vegan. Just make sure the butter is salted or to add salt so you can really taste it in the sandwich.
    • Cucumbers - Any variety of cucumber will work for this recipe. If you want to make the sandwich a bit heartier, try adding other fresh veggies like tomatoes and red onions.
    • Cilantro-Mint Chutney - I love making cilantro-mint chutney at home because I can control the heat as well as the herbs I want to feature the most in the chutney. However, you can also opt for buying a store-bought variety to save some time!

    Ingredients
     

    • 4 slices white bread
    • 2 tablespoons salted butter softened at room temperature
    • 2 tablespoons homemade cilantro mint chutney or store-bought chutney
    • ½ cucumber (any kind will work)

    Instructions
     

    1. Cut the crusts off your 4 slices white bread.
    2. Generously butter each slice of bread with ~½ tablespoon of butter. This creates a barrier between the chutney and the bread so as not to create a soggy sandwich.

    4. Layer one slice of each sandwich with sliced cucumbers and place the slices together to form a sandwich.

    • Don't throw out the crusts, you can cube and bake them for croutons!
