This sweet tamarind pani (water) is made with tamarind-date chutney to create a sweet and tangy water with which to fill your pani puri.

  1. In a pitcher or large bowl, mix together ¼ cup store-bought or homemade tamarind-date chutney, ½ teaspoon chaat masala, 1 teaspoon black salt, and 2 cups cold water.
  2. Use a fine mesh strainer to strain the pani (water) into a large bowl. The water will stay fresh in the fridge for 3-4 days.
