Bhel Puri (Puffed Rice Chaat)

Bhel puri is an easy to make puffed rice chaat bursting with flavors from the fresh veggies, roasted peanuts, and chutneys!

Equipment

Ingredients
 

  • 2 roma tomatoes finely diced
  • ½ (125 g) red onion finely diced
  • 4 cups puffed rice
  • ½ cup unroasted peanuts with skin on
  • ¼ cup store bought or homemade tamarind-date chutney
  • 2 tablespoons store bought or homemade cilantro-mint chutney
  • 1 ½ teaspoons chaat masala plus more to top
  • ¼ cup thin sev fried chickpea snack or crushed papdi or crushed pani puri (Optional)

Prep Ingredients

  1. Dice 2 roma tomatoes
  2. Dice ½ red onion

Main Steps

  1. Preheat the oven to 325F. 
  2. Take two large baking sheets. Add 4 cups puffed rice to one and ½ cup unroasted peanuts with skin on to the other. Place both sheets in the oven and allow the puffed rice to toast for ~8 minutes or until crunchy and the peanuts to roast for 10-12 minutes until golden brown. Sprinkle a pinch of salt on the nuts while still warm. 
  3.  In a large bowl mix tomatoes, onions, ¼ cup store bought or homemade tamarind-date chutney, 2 tablespoons store bought or homemade cilantro-mint chutney, 1 ½ teaspoons chaat masalaand ¼ cup thin sev and mix until the vegetables are thoroughly coated in the chutneys. 
  4. Add puffed rice, toasted peanuts, and sev and mix with urgency until all the crunchy elements are tossed together with the vegetables and chutney. Serve immediately and enjoy!

Notes and Tips

  • Puffed rice can easily be found as muramura at Indian grocery stores or bought online. Alternatively, you can crush rice cakes found in American grocery stores for a similar flavor and texture.
