Easy Bread Upma with Egg

White bread croutons are toasted in ghee, tossed with an onion-tomato masala, and blanketed with a layer of egg.

Ingredients
 

  • 2 tablespoons unsalted ghee or butter
  • 4 slices white bread
  • 1 tablespoons vegetable oil
  • 1 (300 g) medium yellow onion finely diced
  • 2 Thai or serrano chilis finely chopped
  • 2 (160 g) roma tomatoes finely diced
  • ½ tea turmeric powder
  • ½ teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon sea salt plus more to taste
  • 2 eggs
  • 1 Tbs lemon juice
  • 3-5 sprigs cilantro or other fresh herb like mint

Instructions
 

Prep Ingredients

  1. Finely chop 1 medium yellow onion
  2. Finely chop 2 Thai or serrano chilis
  3. Finely chop 2 roma tomatoes

Main Recipe

  1. Cut crusts off 4 slices white bread and cut each slice into 9 squares using a serrated knife.
  2. Melt half of the 2 tablespoons unsalted ghee in a large skillet. Add half of your bread squares and toast on both sides until golden brown. Remove the bread from the pan and toast the remaining bread squares with the other half of ghee. Set bread squares aside.
  3. In the same pan on medium heat, add 1 tablespoons vegetable oil, 1 medium yellow onion (finely chopped), and 2 Thai or serrano chilis (chopped). Sauté ingredients for 2-3 minutes until the onion softens and starts turning slightly brown.
  4. Add diced 2 roma tomatoes, ½ tea turmeric powder, ½ teaspoon coriander powder, ½ teaspoon cumin powder, and ½ teaspoon sea salt and stir to incorporate all the ingredients. Sauté for 3-5 minutes or until the tomatoes release their juices and lose their shape. 
  5. Crack 2 eggs in a small bowl and whisk until beaten.
  6. Add the bread cubes back into the onion-tomato masala. Pour the beaten eggs directly over the bread cubes and stir until the onion tomato masala and the egg envelop the bread and the egg is completely cooked.
  7. Plate the bread upma, drizzle with 1 Tbs lemon juice, top with some chopped 3-5 sprigs cilantro (chopped), and enjoy!

Notes and Tips

  • Although the recipe specifies sandwich bread, you can use any leftover bread that you have lying around for this recipe!
